DDC Tech Day | Electronic Tongue Analysis of Sweeteners
Pick To: Electronic tongue technology is a novel method for detecting the taste characteristics of liquids. In this experiment, we use Alpha MOS The company's production Astree , conducting taste analysis on various sweeteners. Examining the sensitivity and repeatability of the electronic tongue sensor, with the aim of providing theoretical insights and technical support for electronic tongue applications in sweetener quality control, product authentication, and product development.
Keywords: Sweeteners, electronic tongue, flavor analysis
Sweeteners refer to a uniform mixture created by blending and processing one or more sweet-tasting substances—either with or without flavor enhancers or auxiliary ingredients—to impart, enhance, or improve the sweetness of a product. Different sweeteners deliver distinct taste profiles; this experiment is based on Alpha MOS The company's production Astree , conducting taste analysis on different samples. Examining the sensitivity and repeatability of the electronic tongue sensor, with the aim of providing theoretical insights and technical support for sweetener quality control and product development using the electronic tongue.
